Date caramel

1 cup medjool dates or soft dates
¼ cup coconut milk (plus more to taste)
1 tsp vanilla extract
½ tsp salt

1. Remove the pits from the dates and soak them in hot water for 10 minutes.
2. Drain the water and add the dates, coconut milk, vanilla extract and salt to a blender.
3. Blend until smooth. If the caramel is too thick add more coconut milk and blend.
4. Top with a sprinkle of sea salt (optional)
5. Enjoy
